Horsemeat rolls with ragù sauce

Brasciole is a dish with meat sauce that is always prepared in Puglia on Sundays. It is a meat roll, originally horse meat, stuffed with parsley, garlic and Parmesan cheese and cooked in tomato sauce that gets very tasty and it can be used for pasta, especially orecchiette. Or you can also enjoy braciole as a second course.

Ingredienti per 2 persone
400 g horsemeat slices
25 g capers
50 g pecorino cheese
500 g tomato sauce
1 bunch parsley
evo oil
1/2 glass red wine
salt
pepper
1 garlic clove

Tenderize the meat slices and top with capers, parsley, pecorino and a sprinkle of pepper.
Roll the slices and close them with toothpicks.
In a saucepan fry the oil with garlic. Put the meat. Saute for 1-2 minutes and add the wine. Let evaporate. Add the tomato sauce and salt and cook for at least 3 hours, adding a little water.
