Ingredients for 4 people
500 grams of Carpino fava beans, dry and peeled
500g of fresh octopus
1 large Acquaviva red onion
evo oil
basil
salt and pepper

Traditionally, the beans are cooked in earthenware pots over a gentle heat of the fireplace. I used an earthenware pot crock and the gas of a kitchen classic.
After washing the beans under cold water, drain and transfer them in a pot, cover with water, bring to a boil on low heat, shaking the pan occasionally and cook for at least 1,5 hour. Smash the fava beans until you get a thick cream.
Aside bring to a boil the water, soak for 3 times to make octopus’ tentacles curved. Add salt and cook for at least 30 minutes.
Cut to the red onion and the octopus once it’s ready. Serve with olive oil, black pepper and basil. Enjoy it!
