Bread baskets with mashed fava beans with mint and caramelized cherry tomatoes and vincotto

Journalist and gastronome Sandro Romano has a gift for you: the delicious recipe of his bread baskets with mashed fava beans with mint and caramelized cherry tomatoes and vincotto.

Ingredients:
2 slices of whole wheat bread loaf
200 gr shelled fava beans
2 sun-dried tomatoes
vincotto
sugar
mint
salt
extra virgin olive oil
ice

Boil the beans for a few minutes in water with a little salt and immediately dip them in ice water to preserve the brilliance of the beautiful green color. Blend with a little olive oil, mint to taste and salt.
Prepare the basket paving the loaf pan with a rolling pin and lay it inside a aluminum stencil. Put it in the oven at 180°C/350°F until it is dried, forming a basket that will be easy to remove from the mold.
In a small pan or in the oven, toast the other slice of bread, cut into small cubes.
In a nonstick frying pan, caramelize the tomatoes with the sugar and a little olive oil.
Assemble putting the bread cubes in the basket and the mashed beans. Complete, on the surface, with the cherry tomatoes and garnish with a mint leaf. Complete the presentation with a sprinkle of evo oil and vincotto, in which you can dip the preparation.
