Zucchini “plain style” (Salento version)

1 kg zucchini
garlic clove
evo oil
a small bunch of parsley
salt to taste

Wash the zucchini very well and cube them. After having sprinkled them with salt strain them in a colander to loose some liquid.
Fry the garlic in oil until golden. Remove the garlic, add zucchini to the oil and fry for a while, shaking the pan now and then. Using a spoon to stir the zucchini might reduce them to mush. Once done season with salt, sprinkle with finely chopped parsley before serving.
