800 g donkey meat in large pieces
1 large onion
1 celery stick
4 large tomatoes
1 bay leaf
1 glass of red wine
125 ml extra vergin olive oil
Put all the chopped vegetables in an earthenware with the oil until the oil is absorbed. Add the donkey pieces, wine, tomatoes and spices.
Cover and let simmer for t least 4-5 hours.
